I have had conversation with VA ABC and they have indicated that to be considered a farm winery we will need minimum of 51% of our honey produced on land we own or land we lease. They also want some honey production at the meadery. We will install 1-2 hives on our roof. Thanks for the ideas/suggestions.

I have a finished mead that is TTB formula approved.
I want to make a variant that will be barrel aged and have additions of fruit and spice.
Is there a straight forward way to move forward with this?
Is it a new formula? Simply a copy of approved, with the additional steps?

What are some DIY solutions folks might have used to cool/chill non-jacketed tanks? I agree temperature control is key. Is it possible to effectively cool a 2000L single wall tank (44 inches wide) without Glycol?
